3 medium sweet potatoes (regular potatoes can be substituted), roughly diced
1 medium shallot or 3 cloves garlic, minced
4-5 leaves kale, sliced into 1” strips
½ medium onion, diced
2 tbsp oil or butter
1 tsp salt
2 tsp ground pepper
Preheat oven to 375. Add oil to a baking sheet, and then add
sweet potatoes, shallot, kale, and onion, mixing thoroughly.
Bake for 20 minutes, stirring 1-2 times, or until sweet potatoes
are tender and starting to brown.
Alternately, this recipe can be made on the stove-top. Heat oil
in a large skillet over medium heat. Add sweet potatoes and
fry for 5-10 minutes, stirring occasionally, until they start to
brown. Add onions and shallot and cook for an additional 3-5
minutes, stirring occasionally, until translucent. Add kale and
cook for 3-5 minutes longer, stirring occasionally. Add salt
and pepper and serve.
